Shape


Good day!!! Things are starting to take shape here at home. The car has been packed with stuff to deliver to our kids on the mainland and the space it made in the passage calls for some cleaning. So the spring cleaning bug is in the air and we plan to get started soon. 

This week I made a double batch of a different pancake mix. It had baking powder in it so they rose a little. We cooked as needed and the mix lasted for 3 days in the fridge. I whipped up a tub of mascarpone cheese with vanilla and sweetener and we had that on the top with berries. Need I say more?


This time around with the snood, I added some tassels to the end of the scarf. 


Mum has moved from the farm into a cute cottage in town. Hubby hung a new clock for her and she was so happy. She kept looking at that space for the time and there is now a purpose in that spot. 


Mmmm. I am a little seedy from being sleep deprived last night and this pic encourages me to draw the blinds and take a nap.

Birthday


Today D2 was 33. We left home early and spent the day up the coast. We had a yummy breakfast together and then did lots of shopping for different things. We are now about to tuck into dinner of leftover lamb shanks with cauli mash and creme brulee. 


During our outing we went to the cinema.


Ooooh! Look what you can find in the back yard.


A new Thai shop opened up around the corner. It was very fresh and delicious.


A quick and very yummy snack. Camembert accompanied with apple.


Short and sweet today. We are hungry and tired.

Pancakes


Hi! I am now swapping between 2 very easy breakfast recipes. One is crepes made with cream cheese and this one I found this week are pancakes made with almond meal. The recipe is below. The first batch I made we had with coulis. We have found that when you buy fresh strawberries, if you haven't checked them when you bring them home from the shops, check them the next day and more often than not they need to be made into coulis. The coulis keeps in the fridge well for a few days and is perfect to use with many desserts. We may have to plant a patch of strawberries here for the summer. 


Today I defrosted the last of some local blueberries and made up a mix to top the lot off using cinnamon, xylitol and shredded coconut. Breakfast was delicious.

The recipe:

In a bowl:

1 cup of almond meal, 3 eggs and couple of large spoons of greek yoghurt. Mix with hand whisk and get it to the consistency you like. You may have to add some more yoghurt. Cook in pan using butter. 

You can make as many as you need. The mix keeps well in the fridge for the next morning to make them up fresh. 



The patch of violets are slowly coming into flower. We need more sun!

Spring


Welcome to Springtime. We can look forward to longer and warmer days and I have started cleaning things out, again. I have commenced putting my winter yarns away and bringing forth the cottons and have made a few little girl's dresses up in the process. 


A new mailbox replaced the old rusty one in the front yard and it is very trendy. Thanks to the landlord and a few other repairs were done also.



Some new cowels in bright colours have been coming off my hook. I have, however been putting aside some lighter yarn which contains cotton to make up some in preparation for warmer weather. Our temperatures don't get very high here in the summer and some evenings a light cowel can still be warn around the neck. 


Friday night hubby and I went on a twilight walk. It was beautiful out and we thoroughly enjoyed ourselves.
