YUM
Oh, it was too nice to rinse, just yet, and I watched those blades!
Hello, and welcome to another week. Today is a bit cooler and the wind is about. It helps to dry the clothes in record time though.
I have started a new dish. Dot's Pot Luck Bowl. Every few days the fridge finds itself holding bits of leftover protein and vegetables. So it all goes in the fry pan and when cooked is topped with sour cream. Yummo! "Creativity Plus", in the kitchen.
Tonight I have a packet of mince that needs using up tomorrow, so I start with frying off some onion, garlic, ginger and chilli in some coconut oil. Then I add the mince and when browned add any vegetables I can rake up. I wonder if there will be enough for tomorrow night?
This week hubby and I went on 'date night'. I succumbed to what hubby was having and enjoyed a 'Carb' meal, Chicken Phad Thai. It was delicious! May have to do that again!
We enjoyed our meal together parked by the sea. It was a beautiful evening.
Last week you saw me making iced coffees. The weather got extremely hot over the weekend and so I was making iced coffees a lot; for everyone. I have found an easier way to make them now... Yummo!!!

Cool
Hello! We have been having some lovely weather. We wake up each day to warm temperatures and by the afternoon I am ready for an iced coffee. I have been making a huge jug of plunger coffee every few days, making 2 coffees with it for the 'now moment' and making the remainder into ice blocks. When I need to make up an iced coffee (or 2) I pop several coffee blocks into the blender along with a little water, sweeter and cream and wollaaaah!!!! Yum, so easy and nice.
It's often cooler outside than inside, so we are out on the deck on most occasions. I love having my first coffee for the day in the crisp morning air, so cool and peaceful.
And look what I picked from our garden! The first zucchini came inside and there are two more close behind.
Fruit from the freezer to defrost and eat with pancakes. Made a delicious meal. The freeze box is tidy now (hee, hee).
Yes, I am knitting beanies. They are still selling over the summer and I need to restock the shelf.
Look at that beautiful water, like a mirror. So coooool!

In the Vegi Patch
Good morning! This was hubby's 'coffee shot' at breakfast today. Frowner?
As you may notice, I planted some mint under the tap as from past I have experienced it doing well. And that it is, it smells wonderful.
I planted 5 zucchini seedlings and 4 are doing well. One is looking quite sickly and so it will be replaced with some lettuces or radishes which I am waiting to sprout.
The kale will be able to be picked in a couple of weeks.
And last, but not least, is a healthy patch of oregano.
I am waiting for peas to pop out of the ground and for tomato seedlings to take off. We have enjoyed a handful or 2 of lovely raspberries. Not sure if the raspberry plants are any good and will stay in place.
I was given this soft zucchini and I sliced it into rounds, fried them in oil and butter in the pan, topped the rounds with bacon and cheese and baked them in the oven. They went from oven to plate and served with a dollop of sour cream. Delicious.

Things
Welcome to an early post from me, although it is just a day. I have a full day tomorrow and thought it best to get it out now rather than Wednesday.
I have completed a pretty size 8 cotton jumper. The beauty with cotton is that it can keep the wearer warm or cool when needed. The colour co-ordination was my design and I was pleased how they came together.
And I have been crocheting apple cozies. Aren't they cute; and they work very well? No bruised apples!!!
I made several to put on display and filled them with tissue paper. The basket has made it into the window amongst the 'back to school' display.
We had family around for morning tea to celebrate a birthday. I whipped up some ham, cheese, Camembert and pickle bites and also some ginger creams topped with fresh raspberries. They went down very well with coffees all round.
Today I finally got some letters in the mail.
D2 joined me for my walk this morning as she had a later start for work. The water was not quite at full tide but was very nice to see.

Happy New Year
I trust this finds you all well and happy. Did you have a good Christmas? Welcome to the New Year of 2018!!!!
Today saw the other 2 members of our home off to work and so I have been catching up on some baking this morning. I have made seed crackers, granola and baked some diced pumpkin ready for the quiche for dinner. We have been enjoying the summer fruits available at the moment, hence the mango lassi above. Yummo.
I cooked a cheesecake for Christmas and was able to use a punnet of fresh raspberries for the topping.
My knitting needles have kept busy and I made this pretty pink cotton jumper. There is a multi-coloured jumper about to come off the needles today and be sewn together.
We found ourselves popping out most days and meeting up with other folk at different spots in our community. We visited the Dip Falls at Mawbanna.
Hubby was pleased to get his drone out for a fly on most occasions.
D2 relaxing and being creative. Clever girl.
And I have kept up my walks!
Do you have goals set for 2018? I have to sort, sort and sort through stuff. This week I am starting on my spices.
